Garden Seasonal Soup
Ingredients (4 servings)
  • 1 tsp sunflower oil
  • 1 yellow onion finely chopped
  • 3 cups carrots cut in circles
  • 4 stalks of celery finely chopped
  • 1 cup green cabbage roughly chopped
  • 1 inch ginger, peeled and diced
  • 1 cup red lentils
  • 1 tsp turmeric powder
  • Pinch of salt
  • 4 cups water
Directions
  1. Saute onion, ginger, and carrots in sunflower oil for 5 minutes
  2. Add the rest of ingredients. Bring to a boil, lower the heat, cover and simmer for 20 minutes
  3. Transfer the soup into a blender carefully and blend on low speed until smooth
  4. Season with salt and serve
