Ingredients (4 servings)
- 1 tsp sunflower oil
- 1 yellow onion finely chopped
- 3 cups carrots cut in circles
- 4 stalks of celery finely chopped
- 1 cup green cabbage roughly chopped
- 1 inch ginger, peeled and diced
- 1 cup red lentils
- 1 tsp turmeric powder
- Pinch of salt
- 4 cups water
Directions
- Saute onion, ginger, and carrots in sunflower oil for 5 minutes
- Add the rest of ingredients. Bring to a boil, lower the heat, cover and simmer for 20 minutes
- Transfer the soup into a blender carefully and blend on low speed until smooth
- Season with salt and serve
